Une Année Brewery was started in 2013 as a Belgian-inspired brewery in Chicago. After the first few years producing mainly Abbey Ales, Saisons, and Belgian IPAs, we have found our niche focusing more on fruited Wild Ales. For these fruited Wild Ales, we stainless ferment the base beer with our house mixed culture (including multiple strains of Lacto, Pedio, Sacc, and Brett) before adding fruit for a secondary fermentation.

In addition to the Une Année brand, in late 2015 we started another brand called Hubbard's Cave where we focus more on American styles, primarily hoppy beers and flavored imperial stouts. We have recently scaled production on this brand considerably with the move to canning our “Fresh” series, which is a series of hazy IIPAs utilizing a similar grain bill, but with each version (or “V”) indicating a different hop-combo.

Both are brewed under the same roof and by the same people at our location in Niles, IL, just northwest of Chicago. They are not different breweries, just separate brands to differentiate the styles being brewed.

For these fruited Wild Ales, we stainless ferment the base beer with our house mixed culture (including multiple strains of Lacto, Pedio, Sacc, and Brett) before adding fruit for a secondary fermentation.

In addition to the Une Année brand, in late 2015 we started another brand called Hubbard's Cave where we focus more on American styles, primarily hoppy beers and flavored imperial stouts. We have recently scaled production on this brand considerably with the move to canning our “Fresh” series, which is a series of hazy IIPAs utilizing a similar grain bill, but with each version (or “V”) indicating a different hop-combo.

Both are brewed under the same roof and by the same people at our location in Niles, IL, just northwest of Chicago. They are not different breweries, just separate brands to differentiate the styles being brewed.

Verboten Brewing and Barrel Project

Verboten, which opened in early 2013, is a true boutique brewery. The Sixteen tap handles, including one Nitro tap, rotate often so that new beers can be introduced every few weeks. The brewery also uses as much seasonal and local ingredients as possible in each of our handcrafted ales. At Verboten, we create unique beers taking typical beer styles and adding our own twist to make our constantly rotating selections new and exciting.

Von Trapp Brewing

Over the course of many visits to Austria, Johannes von Trapp, the youngest son of Maria and the Baron, gained an appreciation for the crisp, clean Austrian lager beers. When the craft beer movement in the United States gained momentum in the early 1990s, there was a noticeable lack of focus on lagers. It’s not surprising, considering that lagers are more challenging to brew, take longer to mature, and are therefore more expensive to create. For two decades Johannes dreamed of building an Austrian-style brewery at the Trapp Family Lodge, and in 2010 that dream came to fruition.

A humble brewery with the capacity of 2,000 barrels per year attracted attention under the name Trapp Lager, and the brewery received requests from all over the United States. The von Trapp family, who had always been reticent to commercialize their family heritage, realized that they had a product deserving of the family name. The new facility, completed in 2015 under the name von Trapp Brewing, allowed the family to expand beyond their home territory and spread the gospel of craft lagers.

Wild Mind Ales

In August 2016, Wild Mind Artisan Ales opened in South Minneapolis to deliver funky, wild beers to the neighborhood. To make this happen, our head brewer traveled around Minnesota to harvest yeast strains from various wild fruit bushes, trees, and wildflowers. We use that yeast to create wild, sour, farmhouse, saison, and other rustic-style ales through aging, blending, and mixed-fermentation.

Our beers are designed to buck convention and stretch the flavor profiles of what beer can be. Whether it’s a barrel-fermented sour or a heavily-hopped IPA, our wild yeast makes each beer unique and packed with a depth of flavor that’ll keep you coming back for more.
